I am changing jobs and getting new, better insurance. My children are currently on wife’s plan which was better than my former employer. Can I take everyone to my new plan?
Yes, you can.
If you bring you wife in, some insurance plans will have an additional fee/penalty to cover a spouse who has the opportunity to be covered by their own employer’s plan. But the penalty/fee might be worth it to not pay the premiums for your wife and/or get her onto your better plan. It’s also possible her employer will offer a credit to her for not using their insurance – since they won’t be on the hook for the employer premium contribution.

Fyi, try to avoid having two coverages at once for the same individual. You end up paying two premiums but only getting the benefits of the better of the two policies, rather than their sum. It also makes billing more complicated (referred to as “coordination of benefits”). Speaking from experience and regret…
Fun fact: Dual coverage may be unavoidable for a newborn if you want them covered under the father’s plan but the mother has her own plan. This is because the mother’s coverage extends to a newborn up to 30 days after birth.
